Breakfast Cookies – A Pinterest Keeper

This post is a little late in coming, but better late than never right?  Over Spring Break before the sickness hit our house I was busy baking up some of my Pinterest finds.  The flourless chocolate chip cookies weren’t bad… but this one was a hit with hubby and WeeMan.  So far I’ve made it once a week since spring break. Hubby loves taking them in his lunch box for his morning break at work.  Who knew hubby would actually like healthy cookies!
So here’s the recipe – super easy – WeeMan even helped with parts.
Mash 3 to 4 bananas – we usually go with 4 and the riper they are the better.  The last batch I made had black bananas.  Super sweet!

The line up of the other ingredients – dried cranberries, cinnamon, oatmeal, and unsweetened applesauce

Mix one cup applesauce, 1.5 cups oatmeal, smashed bananas, a handful of cranberries, and a sprinkle of cinnamon.  Scoop out onto a lightly greased cookie sheet.

Bake at 350 for 35 minutes. They will have a soft spongy texture.  I store ours in the fridge.  Makes about 2 dozen.  This week I got adventurous and added a handful of  mini chocolate chips.  I’m thinking peanut butter chips would be yummy too.
